🥒 Spoon Zucchini Fritters Recipe
Quick, crispy, and a great way to sneak in veggies!

🧾 Ingredients:
2 eggs (large, free-range)

2 zucchinis (large, grated – no need to peel)

140g (1 1/8 cups) all-purpose flour (or gluten-free alternative)

60ml (1/4 cup) milk (or almond/soy milk)

1 tsp baking powder

40g grated cheese (cheddar, Swiss, or Monterey Jack)

50g ham (chopped boiled ham or crispy bacon)

Salt & pepper (to taste; add cayenne for spice)

Neutral oil for frying (canola, sunflower, peanut, or corn oil)

👩‍🍳 Instructions:
Grate the zucchini using the coarse side of a grater into a bowl.

In a separate bowl, beat eggs, then add cheese, salt, and pepper. Mix well.

Add flour, baking powder, and milk to the egg mixture. Stir to form a thick batter.

Fold in the grated zucchini and ham.
