Ingredients:
For the Dumplings:
- 2 large ripe peaches, peeled and halved
- 1 sheet of puff pastry (thawed)
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
For the Sauce:
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 cup orange soda (or lemon-lime soda)
Directions:
- Prepare the Peaches: Preheat your oven to 375°F (190°C). Peel and halve the peaches, removing the pit. Mix the sugar and ground cinnamon in a small bowl and sprinkle it over the peach halves.
- Wrap the Peaches: Roll out the puff pastry and cut it into four equal squares. Place one peach half in the center of each square, cut-side up. Wrap the pastry around the peach, pinching the edges to seal. Place the dumplings in a greased 9×13-inch baking dish.
- Make the Sauce: In a saucepan over medium heat, melt the butter. Stir in the granulated sugar, brown sugar, cinnamon, and vanilla extract. Cook until the mixture is smooth and combined, then pour in the orange soda. Stir gently until the sauce is bubbly and fragrant.
- Pour and Bake: Pour the sauce evenly over the peach dumplings in the baking dish. Bake for 35–40 minutes, or until the pastry is golden brown and the sauce is thickened.
- Serve: Allow the dumplings to cool slightly before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
