How to Make Cajun Corn On The Cob:
- Prepare the Corn:
Start by husking the corn. Remove the outer leaves and silk strands from the corn cob. Rinse them off if necessary to get rid of any leftover silk. - Preheat the Grill or Boil the Corn:
- If grilling: Preheat your grill to medium heat. Brush the corn with olive oil and season with salt and pepper.
- If boiling: Bring a large pot of salted water to a boil, and cook the corn for about 7-10 minutes until tender.
- Make the Cajun Mayo Sauce:
In a bowl, mix together the mayonnaise, sour cream (or Mexican crema), Cajun spice, smoked paprika, onion powder, garlic powder, and lime juice. Stir until well combined. Taste and adjust the seasoning as needed. If you like extra heat, add the chipotle or chili powder to the sauce for that smoky kick. - Grill or Boil the Corn:
- For grilling: Place the oiled and seasoned corn directly on the grill. Grill for about 10-12 minutes, turning every 2-3 minutes, until the corn is charred and tender.
