Ingredients:
- 4 egg yolks
- 4 egg whites
- 3 tbsp sugar
- 400g (10%) Greek yogurt
- 4 tbsp cornstarch
- 1/2 tsp baking powder
- 40g chocolate chips (optional, for extra indulgence)
Instructions:
STEP 1: PREPARE THE INGREDIENTS
- Preheat the oven to 170°C (340°F). Lightly grease an 8-inch cake pan and line it with parchment paper.
- Separate the egg yolks and egg whites into two different mixing bowls.
STEP 2: PREPARE THE BATTER
- In a large mixing bowl, whisk the egg yolks and sugar together until the mixture is smooth and slightly pale.
- Add the Greek yogurt and mix well until fully incorporated.
- Sift in the cornstarch and baking powder, then gently mix until the batter is smooth and lump-free.
STEP 3: WHIP THE EGG WHITES
- Using an electric mixer, beat the egg whites on medium speed until soft peaks form.
- Gradually add a pinch of sugar and continue beating until stiff peaksform. This step is essential to create a light and airy texture.
