Directions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Brown the ground sausage in a skillet over medium heat, breaking it apart as it cooks. Drain off any excess fat and let it cool slightly.
In a large mixing bowl, combine the cooked sausage, cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
Fill each halved jalapeno with the sausage and cheese mixture, pressing it in firmly.
Arrange the stuffed jalapenos on the prepared baking sheet, cut side up. Bake in the preheated oven for 20-25 minutes, or until the jalapenos are tender and the filling is golden and bubbly.
Allow the bites to cool slightly before serving.
Variations & Tips
For a milder version, try using baby bell peppers instead of jalapenos. You can also experiment with the filling by adding in chopped green onions or a bit of crumbled bacon for extra flavor. If you prefer a bit of a crunch, sprinkle some breadcrumbs on top before baking. And don’t forget to taste your filling before stuffing the peppers to adjust the seasonings to your liking.
