Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the diced ham, sliced potatoes, condensed cream of mushroom soup, shredded cheddar cheese, and milk. Stir until all ingredients are well combined.
Transfer the mixture into a greased 9×13 inch baking dish, spreading it out evenly.
Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden and bubbly.
Let the casserole cool for a few minutes before serving.
Variations & Tips
For a bit of a kick, consider adding a teaspoon of Dijon mustard or a pinch of cayenne pepper to the mixture. You can also swap out the cream of mushroom soup for cream of chicken or cheddar cheese soup for a different flavor profile. If you prefer a vegetarian version, omit the ham and add sautéed mushrooms or steamed broccoli for added texture and taste. For a crispy topping, sprinkle some breadcrumbs mixed with melted butter over the casserole before the final 15 minutes of baking.
