Ingredients
Soy curls 1.5 cups
Vegetable Broth 3 cups
Chopped Celery 1
Onion 1/2, cut into fine slices
Vegan oil 2tbsp
Dijon mustard 2tsp
Onion powder 1/2 tsp
Garlic powder 1/2 tsp
Vegan Mayo 1/2cup
Black pepper 1/4 tsp
Salt, add according to taste
Salad Dressing
Tahini 6tbsp, also use vegan mayo
Cider Vinegar 4tbsp
Water 2tbsp
Maple sugar 1tbsp
Instructions
Prepare Salad dressing
Add tahini, cider vinegar, water, and maple sugar in a mixing bowl.
Combine all ingredients. Set aside, and keep in the fridge.
Prepare Soy curl salad
Add vegetable broth to a pot. Cook broth over medium heat until it boils.
Next, add soy curls to a large bowl, and add vegetable broth over the soy curls.
For 10 to 15 minutes, soak soy curls with vegetable broth.
Dry soy curls with two methods.
1st Method- Dry with a towel
After 10-15 minutes, use a paper or kitchen towel to dry the soy curls. Drain extra water from the soy curls.
2nd Method- Cook soy Curls
Pour vegan oil into the pan, and warm it over medium heat.
Add soaked soy curls to the pan. Cook it for two minutes.
Now, cook half the vegetable broth until it is half reduced.
Next, simmer the remaining vegetable broth until all liquid broth is fully cooked.
