1. Grease the inside of your slow cooker with butter or cooking spray.
2. Layer half of the French bread cubes evenly in the bottom of the slow cooker.
3. Spread half of the sliced bananas over the bread.
4. Repeat with the remaining bread cubes and banana slices.
5. In a large mixing bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, vanilla extract, cinnamon, and salt until well combined.
6. Pour the egg mixture evenly over the bread and banana layers, pressing down gently to ensure all the bread cubes soak up the liquid.
7. Cover the slow cooker and refrigerate for at least 4 hours or overnight for the best results.
8. In the morning, set the slow cooker to low and cook for 5-6 hours or until the French toast is puffy and set in the center.
9. Serve warm with your favorite toppings.
