Directions
Preheat your oven to 400°F (200°C).
In a shallow bowl, mix together the parmesan cheese, Italian herbs, garlic powder, salt, and pepper.
Brush each chicken breast with olive oil, ensuring they are well-coated.
Press each chicken breast into the parmesan mixture, making sure both sides are evenly coated.
Place the chicken breasts on a baking sheet lined with parchment paper.
Sprinkle the panko breadcrumbs evenly over the top of the chicken breasts.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the top is golden brown.
Let the chicken rest for a few minutes before serving.

For a spicier kick, add a pinch of red pepper flakes to the parmesan mixture. If you prefer a gluten-free option, substitute the panko breadcrumbs with crushed gluten-free crackers or almond flour.
