👨‍🍳 How to Make Cheesy Chicken Muffins

Step 1: Prepare the Chicken

Cut the chicken breast into small cubes.

Step 2: Cook the Chicken

Heat a drizzle of extra virgin olive oil in a pan with a garlic clove. Add the chicken cubes and cook for about 7–8 minutes, until golden and cooked through. Season with salt and pepper, then remove from heat and discard the garlic. Set aside.

Step 3: Mix Wet Ingredients

In a large mixing bowl, crack in the eggs and add the sunflower seed oil. Whisk until combined.

Step 4: Add the Yogurt

Stir in the yogurt until fully incorporated.

Step 5: Combine Dry Ingredients

Sift in the flour, baking powder, and a pinch of salt. Mix with a whisk or spatula until you get a smooth batter.

Step 6: Add the Chicken

Fold the cooked chicken cubes into the batter.

Step 7: Add the Cheese

Add the diced scamorza cheese and mix well to distribute evenly.

Step 8: Fill and Bake

Line a muffin tin with paper liners and fill each one about ž full with the batter. Bake in a preheated static oven at 180°C (360°F) for approximately 20 minutes, or until golden brown and cooked through.

Step 9: Cool and Serve

Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

  • Scamorza can be substituted with mozzarella or provolone for a different cheesy twist.
