1 cup raw lentils, rinsed
4 cups vegetable broth
1 can (14.5 oz) diced tomatoes
1 onion, chopped
2 carrots, sliced
Directions
1. Place the rinsed lentils in the slow cooker.
2. Add the chopped onion and sliced carrots.
3. Pour in the vegetable broth and the can of diced tomatoes, including the juice.
4. Stir everything together to combine.
5. Cover and cook on low for 6-8 hours, or until the lentils are tender.
6. Before serving, give the soup a good stir and season with salt and pepper to taste.
Variations & Tips
For a bit of spice, add a teaspoon of cumin or curry powder to the soup. If you have picky eaters, consider blending the soup until smooth for a creamy texture that hides the veggies. You can also add a handful of spinach or kale during the last 30 minutes of cooking for some extra greens. For a heartier meal, toss in some cooked sausage or shredded chicken.
