Pork and Potato Skewers with Honey Mustard Glaze

1. Prepare the Pork:

Cover the pork slices with cling film and tenderize both sides using a kitchen mallet.
Season both sides with salt and pepper.
2. Season the Potatoes:

In a bowl, mix sliced potatoes with salt, black pepper, paprika, and vegetable oil.
3. Assemble the Skewers:

 

Alternately thread potatoes, pork slices, onion rings, and bacon (if using) onto skewers.
4. Bake the Skewers:

Preheat the oven to 200°C (392°F).
Place damp parchment paper on top of foil on a baking sheet.
Lay the skewers on the foil and seal tightly.
Bake for 60 minutes.
5. Prepare the Sauce:

 

Mix soy sauce, ketchup, honey, and French mustard in a bowl.
6. Glaze and Finish Baking:

Remove the foil and parchment paper.
Brush the skewers with the sauce.
Bake for another 15-20 minutes until golden brown.
7. Serve:

Remove the skewers from the oven and serve hot.
Serving Suggestions
Serve with a side of green salad or roasted vegetables.
Pair with a dipping sauce of your choice, such as garlic aioli or BBQ sauce.
