Old-Fashioned Oklahoma Nut Candy

  1. Step 1: Prepare the Pan: Line an $8 \times 8$-inch baking pan with parchment paper or lightly grease it for easy removal of the candy later.
  2. Step 2: Make the Candy Base: In a large saucepan over medium heat, combine the 1 cup butter, 2 cups sugar, and 1/2 cup evaporated milk. Stir constantly until the mixture comes to a boil. Once boiling, stop stirring and let it cook until it reaches the soft-ball stage ($235^\circ\text{F}–240^\circ\text{F}$) on a candy thermometer, about 8–10 minutes.
  3. Step 3: Finish and Pour Base: Remove from heat and stir in the 1 teaspoon vanilla extract and 2 cups chopped nuts until evenly combined. Pour the hot candy mixture into the prepared baking pan, spreading it out evenly with a spatula. Let the candy cool slightly while you prepare the topping.
  4. Step 4: Add the Chocolate Topping: In a microwave-safe bowl, melt the $1 1/2$ cups chocolate chips in 30-second intervals, stirring between each interval, until smooth. Spread the melted chocolate evenly over the top of the candy base. Optional: Sprinkle additional chopped nuts over the melted chocolate for added texture.
  5. Step 5: Chill and Set: Place the pan in the refrigerator for 1–2 hours, or until the candy is completely set and firm.
  6. Step 6: Cut and Enjoy: Once set, lift the candy out of the pan using the parchment paper and transfer it to a cutting board. Cut the candy into small squares or rectangles of your desired size. Enjoy!
