Place the chicken breasts in the slow cooker.
In a medium bowl, whisk together honey, soy sauce, ketchup, vegetable oil, garlic, red pepper flakes, salt, and pepper.
Pour the honey mixture over the chicken in the slow cooker.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
Once cooked, remove the chicken from the slow cooker and set aside.
Pour the sauce into a saucepan and bring to a simmer over medium heat.
Let the sauce reduce slightly to thicken, about 5-10 minutes.
Serve the chicken with the thickened sauce drizzled over the top.
Variations & Tips
For a tangy twist, add a tablespoon of apple cider vinegar to the sauce. If you prefer a bit more heat, increase the red pepper flakes or add a dash of hot sauce. You can also substitute chicken thighs for the breasts for a juicier result. For a gluten-free version, use tamari instead of soy sauce. To make it more kid-friendly, reduce the red pepper flakes and serve with a side of sweet corn or carrots.
