- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine butter, 1/2 cup powdered sugar, vanilla extract, salt, and flour. Beat until a smooth dough forms.
- Fold in the chopped pecans.
- Wet your hands and roll the dough into 36 evenly sized balls.
- Place the dough balls on a parchment-lined baking sheet and bake for 12 minutes.
- Let the cookies cool completely.
- Place the remaining 1 cup powdered sugar in a shallow bowl.
- Roll the cooled cookies in the powdered sugar to coat.
- Serve and enjoy!
