Make the Meatloaf:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Meatloaf Mix: In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, egg, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix until just combined; avoid overmixing as it can make the meatloaf dense.
- Shape the Meatloaf: Transfer the meat mixture to a loaf pan (or shape it into a freeform loaf on a baking sheet). Spread a thin layer of ketchup on top of the meatloaf to keep it moist and add flavor while it bakes.
- Bake: Bake in the preheated oven for 50-60 minutes or until the meatloaf reaches an internal temperature of 160°F (71°C) and is browned on top.
Make the Mashed Potatoes:
- Boil the Potatoes: While the meatloaf is baking, place the peeled and cubed potatoes in a large pot and cover them with cold water. Bring to a boil over medium-high heat, then reduce the heat and simmer for about 15 minutes, or until the potatoes are tender and easily pierced with a fork.
- Mash the Potatoes: Drain the potatoes and return them to the pot. Add the butter, milk, salt, and pepper. Mash the potatoes until smooth and creamy. For extra creamy potatoes, you can add more milk, adjusting to your desired consistency.
- Add Cheese: Stir in the shredded cheddar cheese while the potatoes are still warm, allowing the cheese to melt into the mash. Taste and adjust the seasoning if needed.
Serve:
- Plate the Meal: Once the meatloaf is done, let it rest for a few minutes before slicing. Serve the meatloaf with a generous scoop of cheesy mashed potatoes.
- Garnish (Optional): Top the mashed potatoes with a sprinkle of fresh parsley for a pop of color and extra flavor.
