Made this the other day as a snack and ended up finishing it all!
1. In a large pot over medium heat, brown the ground hamburger meat until fully cooked. Drain excess fat if necessary.
2. Add the diced chipotle tomatoes and taco seasoning to the pot, stirring to combine with the meat.
3. Pour in the chicken broth and bring the mixture to a simmer.
4. Reduce the heat to low and add the softened cream cheese. Stir continuously until the cream cheese is fully melted and incorporated into the soup.
5. Allow the soup to simmer for an additional 10-15 minutes, stirring occasionally, to let the flavors meld together.
6. Taste and adjust seasoning if needed. Serve hot.
Variations & Tips
For a milder version, substitute regular diced tomatoes for the chipotle variety. You can also add vegetables such as zucchini or bell peppers for extra nutrition and texture. If you prefer a creamier soup, increase the amount of cream cheese or add a splash of heavy cream. For a bit of crunch, top with sliced avocado or a sprinkle of shredded cheese before serving.
