Ingredients
For the Crust:
- 2 ½ cups (250g) graham cracker crumbs
- ½ cup (115g) unsalted butter, melted
- ¼ cup (50g) granulated sugar
For the Cheesecake Filling:
- 16 oz (450g) cream cheese, softened
- 1 cup (240ml) heavy whipping cream
- ¾ cup (90g) powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- ½ cup (120g) sour cream
- 1 packet (7g) unflavored gelatin (optional, for stability)
For the Strawberry Layers:
- 2 ½ cups (400g) fresh strawberries, sliced
- ¼ cup (50g) granulated sugar
- 1 tbsp cornstarch
- ½ cup (120ml) water
For Decoration:
- 1 cup (240ml) whipped cream
- Whole strawberries, for garnish
- Graham cracker crumbs, for topping
Instructions
STEP 1: PREPARE THE CRUST
- In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan.
- Place the crust in the refrigerator while preparing the filling.
