Ingredients

For the Crust:
  • 2 ½ cups (250g) graham cracker crumbs
  • ½ cup (115g) unsalted butter, melted
  • ¼ cup (50g) granulated sugar
For the Cheesecake Filling:
  • 16 oz (450g) cream cheese, softened
  • 1 cup (240ml) heavy whipping cream
  • ¾ cup (90g) powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • ½ cup (120g) sour cream
  • 1 packet (7g) unflavored gelatin (optional, for stability)
For the Strawberry Layers:
  • 2 ½ cups (400g) fresh strawberries, sliced
  • ¼ cup (50g) granulated sugar
  • 1 tbsp cornstarch
  • ½ cup (120ml) water
For Decoration:
  • 1 cup (240ml) whipped cream
  • Whole strawberries, for garnish
  • Graham cracker crumbs, for topping

Instructions

STEP 1: PREPARE THE CRUST

  1. In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until combined.
  2. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan.
  3. Place the crust in the refrigerator while preparing the filling.
