Hard Boiled Egg Fritters: easy and quick to make

Can I Make It Ahead of Time?
To save time in the mornings, boil the eggs the day before and keep them in a fridge (in an airtight container).

Ingredients
POTATOES
1Kg
SALT
PEPPER
PARSLEY
HARD BOILED EGGS
4
EGGS
3
BREAFCRUMBS
OIL FOR FRYING
Add the potatoes to boiling water and cook for 30 minutes or until they are soft.

Step 1
Drain the cooked potatoes, transfer to a large bowl, and mash them.

Step 2
Season with salt and pepper and add the chopped parsley. Mix everything well.

Step 3
Prepare the hard-boiled eggs by cutting them into quarters.

Step 4
Form balls from the mixture and flatten them with one hand to form patties.

Step 5
Place a piece of egg in the center.

Step 6
Close the fritters.

Step 7
Coat each one with the beaten egg mixture.

Step 8
Then coat it with the breadcrumbs.

Step 9
Fry in hot oil until they are golden brown on both sides.
