Ham and Cheese Croquette

  1. In a large bowl, combine the shredded ham, grated cheddar cheese, almond flour, grated Parmesan cheese, chopped parsley, and season with salt and pepper. Mix everything together until well combined.
  2. In a separate bowl, beat the 2 eggs. Add the beaten eggs to the ham and cheese mixture and mix until the mixture holds together.
  3. In a shallow dish, combine the almond flour, paprika, garlic powder, salt, and pepper. This will be used for coating the croquettes.
  4. Take a small portion of the ham and cheese mixture and shape it into a croquette. Roll the croquette in the almond flour mixture, pressing lightly to coat it evenly. Place the coated croquette on a plate or tray. Repeat this process until all the mixture is used up.
  5. Heat a skillet over medium heat and add enough coconut oil or avocado oil to cover the bottom of the skillet.
  1. Dip each coated croquette into the beaten eggs and then place it in the hot skillet. Cook the croquettes until they are golden brown and crispy on all sides, turning them occasionally. This should take about 3-4 minutes per side.
  2. Once the croquettes are cooked and crispy, remove them from the skillet and place them on a plate lined with paper towels to drain any excess oil.
  3. Serve the keto ham and cheese croquettes while they’re still hot. You can enjoy them on their own or with your favorite dipping sauce.
