How To Make Zucchini Fritters
Step 1
Prep the zucchini: Grate the zucchini, sprinkle with salt, and let it drain in a colander for 15 minutes. Squeeze out excess moisture.
Step 2
Make the batter: In a bowl, mix flour, eggs, Parmesan, milk, and yeast until smooth.
Step 3
Combine: Fold in the drained zucchini and season with pepper.
Step 4
Fry: Heat oil in a skillet over medium heat. Drop spoonfuls of batter and flatten slightly. Cook for 2–3 minutes per side until golden and crispy.
