  1. Make the Batter
    In a bowl, whisk together flour, eggs, milk, melted butter, salt, and optional sugar and vanilla until smooth. (Or blend everything in a blender for 10–15 seconds.)
  2. Let It Rest
    Let the batter rest for 15–30 minutes (or up to overnight in the fridge). This makes the crepes more tender.
  3. Cook the Crepes
    Heat a non-stick skillet or crepe pan over medium heat. Lightly butter the pan. Pour in about 1/4 cup batter, quickly tilting the pan in a circular motion to spread it thinly.
  4. Flip & Finish
    Cook for about 1–2 minutes, until the edges start to lift and the bottom is lightly golden. Flip and cook the other side for 30 seconds.
  5. Serve Warm
    Fill with jam, Nutella, whipped cream, fruit, cheese, ham—whatever you love!
