  1. Preheat the Oven:
    • Preheat your oven to 200°C (400°F).
  2. Prepare the Onions:
    • Peel the onions and slice off the ends. Cut the onions in half horizontally (or into thick rings if preferred) to expose the layers.
    • Place the onions cut side up in a baking dish or on a lined baking sheet.
  3. Season the Onions:
    • Drizzle the olive oil (or melted butter) over the onion halves, ensuring they are well-coated.
    • If using, drizzle balsamic vinegar and honey or maple syrup on top to enhance caramelization.
    • Season with salt and pepper to taste and sprinkle fresh thyme leaves over each onion half.
  4. Roast the Onions:
    • Cover the baking dish with foil and place it in the preheated oven.
    • Roast for about 25-30 minutes covered, until the onions begin to soften.
    • Remove the foil and continue roasting for an additional 20-25 minutes, or until the onions are golden brown and caramelized on top. You may want to baste them with their juices halfway through for extra flavor.
  5. Serve:
    • Garnish with a few more fresh thyme leaves if desired and serve warm as a side dish or topping for steak, burgers, or roasted vegetables.

These Caramelized Roasted Onions are packed with flavor and make a perfect accompaniment to many main dishes. The slow roasting brings out the natural sweetness of the onions, giving them a rich, caramelized texture and flavor. Enjoy!
