- Preheat the Oven:
- Preheat your oven to 200°C (400°F).
- Prepare the Onions:
- Peel the onions and slice off the ends. Cut the onions in half horizontally (or into thick rings if preferred) to expose the layers.
- Place the onions cut side up in a baking dish or on a lined baking sheet.
- Season the Onions:
- Drizzle the olive oil (or melted butter) over the onion halves, ensuring they are well-coated.
- If using, drizzle balsamic vinegar and honey or maple syrup on top to enhance caramelization.
- Season with salt and pepper to taste and sprinkle fresh thyme leaves over each onion half.
- Roast the Onions:
- Cover the baking dish with foil and place it in the preheated oven.
- Roast for about 25-30 minutes covered, until the onions begin to soften.
- Remove the foil and continue roasting for an additional 20-25 minutes, or until the onions are golden brown and caramelized on top. You may want to baste them with their juices halfway through for extra flavor.
- Serve:
- Garnish with a few more fresh thyme leaves if desired and serve warm as a side dish or topping for steak, burgers, or roasted vegetables.
