Instructions:
For the Cake:
- Preheat the oven to 350°F (180°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Slowly pour in the boiling water, mixing until the batter is smooth and well combined.
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
For the Frosting:
- Using an electric mixer, cream the softened butter until smooth.
- Gradually add the powdered sugar, cocoa powder, milk, vanilla extract, and a pinch of salt. Mix until everything is smooth and creamy.
To Assemble:
- Once the cakes have fully cooled, frost the cake. You can spread frosting between the layers, on top, and around the sides.
- Chill the cake in the refrigerator for about 20 minutes to set the frosting.
- Serve and enjoy!
Notes:
- If you prefer a richer cake, you can add a bit more oil or a little more sugar depending on your taste.
- The boiling water helps to intensify the flavor of the cocoa powder and makes the cake incredibly moist.
