Instructions:

For the Cake:

  1. Preheat the oven to 350°F (180°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Slowly pour in the boiling water, mixing until the batter is smooth and well combined.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

For the Frosting:

  1. Using an electric mixer, cream the softened butter until smooth.
  2. Gradually add the powdered sugar, cocoa powder, milk, vanilla extract, and a pinch of salt. Mix until everything is smooth and creamy.

To Assemble:

  1. Once the cakes have fully cooled, frost the cake. You can spread frosting between the layers, on top, and around the sides.
  2. Chill the cake in the refrigerator for about 20 minutes to set the frosting.
  3. Serve and enjoy!

Notes:

  • If you prefer a richer cake, you can add a bit more oil or a little more sugar depending on your taste.
  • The boiling water helps to intensify the flavor of the cocoa powder and makes the cake incredibly moist.
