1. Preheat the oven: Preheat your oven to 200°C (400°F).
2. Preparation of the zucchini:
• Grate the zucchini with a coarse grater.
• Place them in a colander, add a little salt, and let them drain for about 10 minutes.
• Then squeeze the zucchini to remove excess water.
3. Preparation of the mixture:
• Finely chop the onion and garlic.
• In a large bowl, mix the drained zucchini, onion, garlic, parmesan cheese, breadcrumbs, egg, and parsley.
• Season with salt and pepper to taste.
• Mix well until you get a smooth consistency.
4. Shaping the balls:
• Form small balls with your hands, taking about a tablespoon of the mixture at a time.
• Place them on a baking sheet lined with parchment paper.
5. Cooking:
• Lightly brush the meatballs with a little olive oil.
• Bake for 20 to 25 minutes, until the meatballs are golden brown and crispy on the outside.
6. Serve:
• Serve hot, with a sauce of your choice (such as tomato sauce or yogurt sauce).
