Preheat your oven to 180°C (gas mark 6) and butter a cake pan.
Arrange the diced apples in the bottom of the pan and sprinkle them lightly with sugar.
In a bowl, whisk the eggs with the caster sugar until the mixture pales.
Add the yogurt, milk, vanilla extract, and lemon zest (if using), and mix well.
Pour this mixture over the apples in the pan.
Bake for approximately 40 to 45 minutes, or until the flan is golden brown and set.
Let cool slightly before removing from the pan and serving this delicious apple and yogurt flan. You can enjoy it warm or cold.
