Ingredients:
- 1 small head of green cabbage, chopped
- 1 large onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 bell pepper (red, green, or yellow), diced
- 2 cups fresh spinach or kale (optional)
- 1 can (14 oz) diced tomatoes with juice
- 6 cups low-sodium vegetable or chicken broth
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika (optional)
- Salt and freshly ground black pepper, to taste
Directions:
- Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion, garlic, and bell pepper. Sauté for 3–4 minutes until the onion is translucent.
- Add the Vegetables: Stir in the carrots, celery, and cabbage. Cook for another 5 minutes, stirring occasionally.
- Combine with Broth: Pour in the diced tomatoes (with their juice) and the broth. Add the basil, oregano, paprika (if using), salt, and pepper. Stir to combine.
- Simmer: Bring the soup to a boil, then reduce the heat to a gentle simmer. Cover and let it cook for 20–25 minutes, or until the vegetables are tender.
