2. Ginger& carrot soup

You will need:

6 cups of veggie broth

2 onions

2 lbs of carrots

3 tbsp of ginger, grated

3 cloves of garlic

A cup of coconut milk

Sea salt, black pepper, and onion powder to taste

2 tbsp of coconut oil

2 tbsp of collagen, optional

How to prepare it: In a pot, add the chopped carrots and garlic, as well as the ginger and broth and bring it to boil. Reduce the heat once it starts to boil and simmer. In the meantime, sauté the onion in a separate pan together with the coconut oil. Once the texture becomes smooth enough, remove it from heat. 3. Red lentil delight

You will need:

¼ cup of coconut or olive oil

2 sweet potatoes

An apple

An onion

2 carrots

½ cup of red lentils

½ tsp of cumin, ground

½ tsp of chili powder

½ tsp of paprika

4 ½ cup of veggie broth

An inch of ginger root, minced

Sea salt and black pepper to taste

Coconut cream, optional

How to make it: Add the oil in a pot and bring it to medium heat. Once it warms up, add the peeled and chopped apples, carrots,onions, and potatoes. Cook for 10 minutes before you combine the ginger, broth,chili, paprika, lentils, and cumin and once it boils, reduce the heat and leave the content to simmer for half an hour. The soup is ready when it becomes thick and soft. Simmer for a bit more and then add the seasoning and the coconut cream. Serve while warm.
